New spin on lunch time- PB&J Skewers w/ SKIPPY® Peanut Butter (PS- perfect for the beach!)

Summer came and went way too fast for us. Even with the school year getting pushed back, I still felt like I blinked and school started already. Since school is so different for our kids this year, I’ve really been trying to think outside the box to keep the girls excited about this new season. 

I try to get creative when it comes to back to school lunches and since we’ve been enjoying our picnics at the beach, I really had to think this one out. Since the girls number 1 request for lunchtime is peanut butter & jelly sandwiches using SKIPPY® Creamy Peanut Butter, I thought it would be fun to give a spin to their favorite by making pb&j skewers. 

The girls can’t get enough of the beach, it’s definitely they’re happy place and they are in their true element when we are near the water. I figured there’s no better way to reward them after a day of distance learning than with an evening beach picnic and play time in the ocean.

For this easy recipe (can be used for breakfast, lunch or dinner), I picked up SKIPPY® Peanut Butter at Kroger, along with some fresh fruit and chopsticks. Instead of using bamboo skewers for this recipe, I like to use chopsticks since they don’t have sharp edges and are safer for little ones! 

Here’s what I used:

  • SKIPPY® Peanut Butter
  • Strawberry Jelly
  • Whole wheat bread 
  • Strawberries
  • Blueberries
  • Chopsticks

Prepare a peanut butter and jelly sandwich as you typically would and then cut the sandwich into even squares. You should have about 6 squares with one sandwich. Now alternate between fruit and a pb&j skewer on the bamboo stick until you have no more room- it’s as easy as that!

I made these for the beach and it was so convenient because it’s an easy way to eat your meal without getting sandy. Holding on to a sandwich with sandy hands is NOT fun and this is the only way I pack our pb&j sandwiches for on the go now. It’s a major bonus that the girls think its super creative so they always eat it all up!
