4 easy recipes using summer peaches

One of my favorite parts about summer is all of the delicious food. We try to eat with the seasons but summer has to be one of my favorites. When you eat with the seasons, you know you are eating the freshest/ripest foods and they come with a ton of flavor. Not to mention, it’s also good for the environment so you know you’re doing your part in helping out with sustainability.

Eating with the seasons helps you maintain a while balanced diet and you know you’re getting the richest nutrients in every season!

Fun fact– in the winter month’s we tend to crave warmer foods- you know comfort foods to keep us warm in cool weather. But in the summer, our bodies produce enough heat so not only do we want light and cool foods to keep us cool, but we also want to eat foods that are easier to digest!

Summer diets

Your summer diet should be filled with plenty of fruits and vegetables, greens and legumes. Hands-down my absolute favorite summer food which I haven having way too much fun incorporating in literally my recipes is PEACHES.

We have been going through peaches like CRAZY over here. It’s one of our favorite summer fruits and we go through at least a box a week between us just grabbing a ripe peach to snack on and me experiencing with a different recipe every other day.

I’m sharing some of my favorite peachy recipes with you and want to know the best part? These all pretty much use the same ingredients so you can easily take the ingredients and use them so many different ways (a personal fav for me).

Peach lemonade

Okay this is the simplest recipe on here and I wouldn’t even call it a recipe really as it’s just a matter of throwing some peaches in lemonade! Make some freshly squeezed lemonade (or cheat and buy store-bought, no one will know) and throw in some peaches about an hour before you plan to serve. Chill and keep in the fridge and serve with a peach garnish. Not only does it taste delicious but looks pretty too! I’m sure it would taste delicious as a cocktail too- add some vodka and you have a party ready to go!

Peach Bruschetta

This may be my favorite of the recipes on the list. I am a total sucker for appetizers and would seriously be happy eating apps and tapas for dinner every night. It’s the best way to get different flavors and foods in without over-doing it with calories, right?

I also love that none of these recipes require much (if any) prep time at all. Here’s what you need for the most delicious summer-y peach bruschetta ever:

  1. You’ll want to start by lightly toasting a French bread and cutting it into slices.
  2. Next you’ll want to drizzle it with olive oil and top with goat cheese
  3. Add prosciutto and grilled peaches

Summer peach salad

I was craving a good summer salad for the longest time and after using all of the ingredients on the bruschetta, I thought- why not throw it all into a salad? The end result was delicious-ness. I’ve had this salad multiple times a week since I first made it and I still can’t get enough of it.

It’s refreshing and healthy, perfect for an easy lunch or a dinner side. For the salad, I like to grill the prosciutto to give it a bit of a crisp and it tastes so good. Again, easy to make- just grab your ingredients and toss in a bowl with arugula!

Peach pizza

If you’re looking for a recipe that is shareable and that the whole family will enjoy, look no further. My husband thought I was crazy for adding peaches to pizza but after one bite he was totally on-board with my peach craze. I use all the same ingredients that I used in the above two recipes, just added a pizza crust. Best part about it, say you’re craving a salad but your family is in a mood for pizza- you can easily make these two recipes with no extra work on your part and everyone is happy!
