Mole tacos with cheese shell

We’ve been trying to cut carbs out at dinnertime and at first I thought, how are we going to survive without tacos? Well, I found the perfect solution. A cheese taco shell! It’s the perfect carb-free meal and it’s delicious.

Things to note– I do not use measurements. I just wing things as I go. Every time I follow a recipe with exact measurements, I mess it up. I sample and eyeball things as I go.

Ingredients

  • Rotisserie chicken
  • Knorr chicken flavor
  • Mole sauce
  • Shredded cheese (Mozzarella or pepper jack)

Step 1: Make the Sauce

Heat up a large skillet and generously spray with cooking spray (or use oil) so your sauce doesn’t stick to the pan. Slowly mix in the mole (it will be very thick like chocolate) and add the Knorr seasoning and water. You should cook it on a medium heat and lower as you go.

Continue to stir and add water and seasoning as needed until you have a consistent sauce. You’ll want it to be thick, but not too thick– make it to your liking.

Step 2: Shred the chicken

It cuts so much time if you buy a rotisserie chicken to shred for meals like this. However, if you are using uncooked chicken, boil it until it’s cooked and then shred. Use two forks and pull the chicken apart. Make sure you don’t forget to keep stirring the sauce!

Step 3: Add the chicken to your sauce

Bring up the heat on the sauce and mix in the chicken. Once the chicken is in, add some more water if it thickens too much. Once the sauce is nice and hot, bring it back down to a low and set aside.

Step 4: Make your cheese shell

Heat up a griddle and spray with cooking spray. Heat up to a medium heat and sprinkle your shredded cheese into a circle and let it start to boil. Wait about 3 minutes and flip over. Cheese will be an orange/brown color.

Once all the cheese is crisped, remove from heat and bend the cheese. Use a fork to folder over or wrap around a cup to create a shell.

Step 5: Add mole to your cheese shell

Add the mole into your cheese shell and serve hot. It’s that simple and you have a no-carb Mexican dinner!
